• Banana bread has become the official comfort food of isolation and we are loving it. Our test kitchen team have added some chocolate to our much loved favourite recipe for Easter baking.
Prep time: 10 minutes
Cooking time: 40 - 50 minutes
Standing time: 10 minutes
Ingredients:
300g plain flour
140g light brown sugar
2 medium overripe bananas, plus 1 to decorate
2 eggs, at room temperature
125ml milk
50g unsalted butter, melted
90g dark chocolate, (70% cocoa solids), finely chopped
60g pecans, chopped
1 tsp ground cinnamon
½ tsp baking soda
½ tsp baking powder
½ tsp vanilla extract (optional)
Method:
Preheat oven to 180C / 160C fan-forced. Line a medium-sized loaf pan with baking paper.
In a medium-sized bowl, sift together the flour, cinnamon, baking soda and baking powder.
In a separate bowl, mash banana with a fork, then add vanilla, eggs, milk and cooled melted butter. Whisk together until well combined. Next, add the flour, cinnamon, baking powder and baking soda. Combine with a spatula gently until flour is incorporated, careful not to overwork the batter.
Add chopped chocolate and pecans, folding in gently.
Transfer batter to the prepared tin, then place a banana sliced in half lengthways on top (see picture). Cook for 45-55 minutes, or until a skewer comes out clean.
Allow to cool completely in the tin for 10-15 minutes before removing and slicing to serve.
The Loaf will keep well in an airtight container for 3-4 days.
Substitutions: Almonds or walnuts work well if you don’t have pecans. Milk chocolate or even chopped up Easter eggs can replace dark chocolate in a pinch. #houseonline

Ingredients:
150g brown sugar
225g caster sugar
225g unsalted butter, at room temperature
160g dark cooking chocolate (70% cocoa solids), finely chopped
3 eggs, at room temperature
125g plain flour
80g Dutch-processed cocoa powder
To Decorate:
1 small packet of speckled chocolate eggs
80 grams white chocolate
Method:
Preheat oven to 180C / 160C fan-forced. Line a 20 x 30 cm baking tray with baking paper.
In a medium-sized saucepan melt the sugars and butter slowly over a medium heat. Stir frequently until the sugar is dissolved, about 5 minutes.
Remove the saucepan from the heat, add the chopped chocolate and stir until all the chocolate is melted. Transfer to a mixing bowl and stand aside until cooled completely, about 30 – 40 minutes.
Once the mixture is cool, whisk in the eggs one at a time. Then sift and fold in the flour and cocoa.
Gently transfer to the prepared baking tray, smooth out evenly with a spatula then scatter speckled eggs over the top. Cook for 18 – 20 minutes. The brownie should be shiny and still very soft to the touch when you take it out of the oven.
Allow to cool completely in the baking tray before removing. Drizzle with melted white chocolate, more speckled eggs if you fancy, then slice to serve.
Brownie will keep well in an airtight for 3-4 days.
