Last Saturday, a MOU was signed between the Department of Industry Vanuatu, The Vanuatu Bucket List and Vanuatu Farmers Market which included Pacific Island Food Revolution's @votausimackenziereur. Vanuatu Farmers Market was created in response to the COVID-19 to promote the local producers and farmers, preserve local employment and support the Vanuatu local economy. This MOU aims to promote the Vanuatu Made products and encourage valued-adding of our local resources. 🇻🇺✊ We also need all of you to contribute by purchasing local products! Talofa from Samoa! 🇼🇸 Pacific Island Food Revolution's @dora_rossi_ has a yummy for your tummy breadfruit dish below which you'd love! Share it with your friends! . . . Have you ever eaten a dish during your travels that you wish you could replicate once home? Inspired by a trip to Barbados with my dearest friend and award-winning international chef 👨🍳 @robertolivernz, this recipe transforms the humble breadfruit into a dish destined to become a family favourite. Prepared with Samoan ingredients, this plant-based salad makes a wonderful side dish to your Sunday To'ana'i (lunch). PICKLED BREADFRUIT SALAD 🍈🥗 1 large breadfruit, peeled and cut into large wedges. 3 large cucumbers 1/4 cup minced red or white onion 1 TBS parsley 1 finely minced red chilli 1/4 cup chopped spring onions Fresh lime juice to taste Salt to taste Cook the breadfruit wedges in cold water, bring to a boil and cook until firm but not mushy, drain well and cool to room temperature. While the breadfruit is resting, prepare the pickle. Peel and grate 2 of the large cucumbers. Peel the third, cut in half, remove the seeds and slice thinly. Add onions, parsley, chilli and spring onions. Add lime juice and salt, cover and let it rest for 1/2 hour. Toss pickle and breadfruit together and allow it to rest for 1/2 hour before serving at room temperature.

Mea'ai Samoa by award-winning author, chef and Pacific Island Food Revolution Executive Director @robertolivernz has touched my heart and transformed my work. A rainy day in Auckland, New Zealand I just came back from a mission in Samoa -- the company I managed was engaged by the Ministry for Agriculture to help them boost agriculture competitiveness. I knew about farm-to-table concept and I learned about Robert’s extraordinary work in the Pacific. After reading Mea'ai Samoa, I made a call -- and he answered! The rest… well, let me try to summarise. Never again would I visit a country without visiting the farmers' market (and the bookshop) first. Our team supported further linking tourism and agriculture in Samoa. I learned how important local cuisine is in enhancing the wellbeing of people and nations. In Robert's words, it is: a delicious answer to physical, economic and cultural health. ❄🥥 FROZEN FRUIT BOWL 🇼🇸 (vegetarian/vegan/gluten-free) This fruit bowl is not only quick and easy to prepare, it is a fantastic way to store and enjoy your favorite fruit even when they are not in season. Faafetai lava, @dora_rossi_! 📝INGREDIENTS 🍍Frozen pineapple 🍈Frozen soursop (black seeds discarded) 🍌Frozen banana 🥭Frozen mango 🥥Coconut water 🍃Fresh mint leaves 🥥Toasted grated coconut BLEND all the fruit with coconut water until the mixture is smooth and quite thick. Transfer mixture to a coconut bowl, adding more frozen or fresh fruit and mint leaves on top, sprinkle with toasted grated coconut for extra texture. ✅ This fruit bowl makes a wonderful afternoon snack for children, it is refreshing, naturally sweet, nutritious and delicious! 🤔ADULTS ONLY!
