To celebrate, we’ll be tucking in and sharing some fun facts about these delicious molluscs including:
🦪 There are three species of oysters grown in Australia - Sydney Rock, Pacific Oysters and the native, flat Angasi oyster 
🦪 A commercial oyster shucker, like those at SFM, will shuck an oyster in about 6 seconds meaning they will shuck about 200 dozen in a day!
🦪 Our picks? If you’re cooking your oysters (we love ‘em steamed with ginger and shallots) go for Pacifics -  they’re big, meaty and present well. Sydney Rocks are a bit more delicate so eat them raw - undressed, with a squeeze of lemon or with a simple mignonette dressing! What’s your favourite way to indulge in oysters?

  • Happy Fry-day! Kick off the weekend with our @seafood_school recipe for Flathead Fillets in Beer Batter...

Ingredients:
Vegetable oil, for deep-frying
1.2kg Flathead fillets, skin off, bones removed
Plain flour, for coating
Lemon wedges, for serving

Tartare Sauce
1 cup whole-egg mayonnaise (see notes)
¼ cup cornichons, finely chopped (see notes)
2 teaspoons capers in brine, rinsed, dried and finely chopped
1 teaspoon Worcestershire sauce

Beer Batter
1½ cups plain flour
1 tablespoon baking powder
1 teaspoon salt
375ml cold beer
 

Method:
Make Tartare Sauce: combine all ingredients in a bowl; cover and refrigerate until needed. 

Make Beer Batter: sift flour, baking powder and salt into a large bowl, mixing well. Gradually whisk in beer until the batter reaches the consistency of thickened cream (you may not need to use all of it).

Heat oil in a wok or deep-fryer to 180°C.

Pat fillets dry with paper towel, dust lightly in flour and dip into Beer Batter. Drain off excess batter. Lower carefully into hot oil, in batches, and deep-fry for 3-5 minutes, until golden brown. Drain on paper towel.

Serve with Tartare Sauce and lemon wedges. Enjoy!

  • Stir-fried Pipis with Tomato Chilli Sauce

Ingredients:

2 tablespoons vegetable oil 
1kg Pipis, purged 
1 bunch garlic chives, cut into 5cm lengths
Steamed jasmine rice, to serve

Tomato Chilli Sauce
½ cup tomato ketchup
3 cloves garlic, crushed
1 teaspoon sambal oelek 
100ml tamarind liquid 
2 tablespoons light soy sauce

Method:

Make Tomato Chilli Sauce: combine all ingredients.

Heat a wok, add oil, pipis and Tomato Chilli Sauce, cover and cook for a minute or 2, shaking often, until shells start to open. As each shell opens, remove to a serving bowl. 

When all shells have opened, return pipis to the wok, add chives and toss them through. 

Transfer to a serving bowl and serve with steamed rice.

  • Cassoulet of Snapper & Clams by @chefjasonroberts.
 
Serves 4
 
300g (10 1/2 oz) snapper skinned and free of bones
1½ tsp coarse sea salt
 
Clams 
30ml (1 fl oz) cooking oil
1 bay leaf
few sprigs of thyme
½ tsp coriander seeds 
2 cloves chopped garlic 
75ml (2 1/2 fl oz) dry white wine
500gms @cloudybayclams 
 
Beans
40ml (1 1/3 fl oz) olive oil
1 clove garlic, bruised
3 sprigs of fresh thyme or rosemary 
2 x 400g (14 oz) can cannellini beans, drained
 
Breadcrumbs
1/3 cup extra Virgo olive oil
½ loaf white bread torn into small pieces
5 sprigs fresh thyme
1 tin of chopped tomatoes
3 tbs chopped flat or curly parsley
 

Break the bread into bite size pieces and lay onto a lined baking sheet, douse with extra-virgin olive oil, sprinkle with sea salt flakes, thyme or fresh rosemary and place in the oven to bake at 165°C/370°F for approximately 15 to 20 minutes or till golden and crisp. 
Remove from oven and set aside. 

Cut the snapper into largish cubes, lightly salt and leave to cure for 20 minutes. Set aside until needed.
2. For the clams warm oil in a large saucepan over medium heat . Add the, bay leaf, thyme, garlic and coriander seed, wine and the clams. Cover with a tight fitting lid and cook for about 1- 2 minutes, Lift the lid, remove clams as they open and set aside. Strain the clam liquid and reserve for the beans.
Place the drained beans into the pot along with the tomatoes and clam liquor, Bring to the boil, add the cured fish and cover with lid, reduce heat and allow to simmer for 5 minutes. Add the clams back to the beans with parsley. Reheat gently for a few minutes; the fish should be firm but not dried out, adjust seasoning with black pepper. Spoon into desired plates and scatter with freshly baked breadcrumbs.
