𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀⁣
1 can of chickpeas, rinsed drained⁣
2 TBSP avocado/coconut oil⁣
1/3 of a cut maple syrup⁣
2 TBSP of almond butter (or tahini)⁣
1/4 cup cocoa powder⁣
splash of vanilla extract⁣
1/2 TSP sea salt⁣
⁣
𝗥𝗲𝗰𝗶𝗽𝗲⁣
Rince and drain chickpeas and add them to a food processor along with your oil, maple syrup, almond butter and blend until smooth. Add in cocoa powder, vanilla extract, and sea salt. Blend again until smooth. If your mixture gets grainy then add in some warm water until your desired consistency. Taste it and adjust to any desired sweetness and blend again until smooth and creamy.⁣

Transfer hummus to a bowl. I sprinkled mine with more sea salt and some coconut sugar. Serve immediately with dried or fresh fruit, crackers, bread, etc.⁣

Serve the dip as is or warm it up in the microwave and dip some pretzels into it - I ate it for breakfast so now shame!⁣

  • Something my grandparents and I did a lot together was bake.  I can distinctly remember the scent of apples and cinnamon floating through their condo. I decided to bake a Swedish apple pie to make me feel closer to them. The warm apples and cinnamon fragrance drifted through the house all day and I know my grandparents would have loved that and would have loved to eat it with me.⁣

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀⁣
6 apples, peeled⁣
1 TBSP cinnamon⁣
1 TBSP coconut sugar⁣
1 egg (or try a flax egg for a vegan pie)⁣
1/2 cup white sugar⁣
1 cup of gluten-free flour (1-1 baking ratio is best)⁣
A splash of vegan milk (I used macadamias nut milk)⁣
Vegan butter⁣
⁣
𝗥𝗲𝗰𝗶𝗽𝗲⁣
Heat your oven to 350°F.⁣
⁣
First, you’ll want to peel and slice 6 apples into a bowl. I used the apples in my fridge so use whatever you have on hand. Add the coconut sugar and cinnamon to the apples and mix until the apples are coated. Set aside.⁣
⁣
Using the vegan butter and a paper towel, butter your pie dish. You could use coconut oil or regular butter as well, whatever you like as long as the dish is coated! Take your apple mixture and pour it into the pie dish making sure the apples are evenly spread out.⁣
⁣
In another bowl, melt about 3 TBSP of butter in the microwave. Once melted, add in the egg, your 1/2 cup of sugar, flour and mix. At this point, it may look dry so add in a few slashes of nut milk to thin out the mixture. You want to end up with a custard/cakey looking batter that can be spread but is not runny or watery.⁣

Once you receive a good consistency, pour the batter mixture over the top of your apples. Use a spatula to spread it as best you can so that the apples are covered. I added a sprinkle of sugar on the top to help it caramelize. ⁣
⁣
Bake at 350 for 50 minutes or until the top is golden and crispy. Let it cool for a few minutes before serving. Enjoy!

  • It's world Cancer Day!!! 🎗️💪

6 years ago I was diagnosed at the age of 21 with stage 3 blood cancer. I had no symptoms or really any concerns about my health except for a  pain condition that was being managed. Fast forward to 2021 and I can now add being a 2x cancer survivor to my resume. 

Cancer doesn't discriminate, it doesn't care how old you are, how healthy you are or who you are. For a long time it felt like cancer was all that defined me. It was all that I thought about and all that I lived for years. It took so much from my life and I can realistically say that it still likes to take little things here and there.

But we are stronger than this disease. In the 6 since I was diagnosed I haven't taken a single day for granted. I'm not grateful for getting cancer, but I'm humbled to have been gifted with a life far more beautiful because of who and what the disease has exposed me to. A spectacular and resilient community, fierce friends who get it, the pain and hardships, and glittering memories filled with laughter, challenge and change.

Cancer may be a part of my life but it's not my entire story.
