Who was at the Health Meets Food conference last weekend? ✋✋✋ We were there with Keith Ayoob, EdD and Chef Chris Koetke talking about the safety and science of MSG, as well as its delicious culinary applications. Here are a few questions we’ve been getting (perhaps you’re wondering, too!): *Can I buy MSG at the store? A. Yes! You can find it as Ac’cent in most seasoning / spice aisles. *Why use monosodium glutamate and not just glutamate? A. Glutamate on its own has a somewhat sour taste. Pairing it with sodium brings out the distinct taste of umami. *Does processed food use MSG in excessive amounts? A.
