  • this isn’t going to happen tomorrow night so you guys will get a break 🤪 but tonight’s meal was tri-tip w/ chimichurri & a caprese salad w/burrata, grilled peaches + strawberries 💃🏼

after dishes the recipe for the chimichurri will go up in my stories later this evening & then I’ll add it to this caption so save this to come back too (the chimichurri is also what I used to marinade the tri tip!)

basic chimichurri recipe:

-1 shallot, finely chopped
-4 garlic cloves, finely chopped
-½ cup champagne vinegar (red wine works too)
-Sea salt to taste, start w/ 1 tsp 
-Red chili flakes to taste
-1/4 cup cilantro, finely chopped 
-1/4 cup basil, finely chopped
-a few sprigs of fresh oregano, finely chopped 
-1/2-3/4 cup flat-leaf parsley, finely chopped
-¾-1 cup extra-virgin olive oil, if blending you will need to add more to thin 
-1/2 lemon, juiced 

Combine all ingredients except for the lemon Let sit for 5 minutes. 

Mix in your lemon juice. You can serve this as is, I like to blend mine for a few seconds to have more of a chunky pesto consistency. 

Serve on top of meat, fish or veggies! It will last for a few days in your fridge & also makes a great marinade for meat.

  • happy birthday to this gal pal of mine @cassidyjdavis we met on instagram & then met irl a few years ago when I was traveling thru Montana & stayed at her house (not ever meeting any of them in person 🤪, which was a whole ordeal in itself) but we ended up in the hay field having a tractor talk until 1 am. Years later & lots of laughs + tears later the rest is history 🤍 we may not see each other often but every-time we do, it picks up where it left off.
