• Deciding what to serve for my first plant-based Thanksgiving has not been easy.  The truth is, even when I did eat meat, the turkey was never my thing so the thought of swapping it out for a processed vegan substitution didn't really appeal to me.  And I hate a loaf.  I even hate the word loaf.  Meat or not - I hate loafs and I'm pretty sure I always will.  Sorry. 
And then it hit me... in our family what we love the most are 1) The Sides and 2) Day-After Leftover Sandwiches made from aforementioned Sides.  And thus my dream Thanksgiving dinner came to be born. 
So here's the process and then I'll share recipes with you in the coming days! 
1)  Chose your favorite bread base - I used Garlic Naan
2)  Spread a healthy dose of Mashed Potatoes on the base
3)  Top with Stuffing Meatballs (these are made with all of the traditional stuffing flavors and ... lentils!  They are insanely good, if I'm being modest, and I cannot wait to share with you!)
4)  Add any other veggie sides you like.  I like roasted sweet potatoes, crispy sauteed mushrooms and a simple salad.  The options are limitless, choose what you like.
4)  Add a few spoonfuls of cranberry sauce on top
5)  Smother it with gravy 
6)  Wrap it up (I ate mine like a huge taco, my classier friends started out with their forks and knives but then just dove in too! Phew!)
7)  Repeat until you're so stuffed, you know it's Thanksgiving

I'm still working on what to call these beauties, because well, Thanksgiving Wraps seems a little bland.  And trust me, these are so FAR from bland.  Suggestions anyone?

  • Hi friends, as promised here's my final round up for your Thanksgiving cocktail hour (or to my friends not in the US...cocktail hour.) All recipes are simple, can be made in advance AND are 100% plant-based (all recipes found here in my feed). Since my favorite part of the holiday is spending time with my loved ones, I arrange the appetizers on a large wooden board right in the kitchen so I'm not stuck with the last minute tasks on my own.  This keeps things easy, relaxed and if I'm lucky, I may even get a helping hand.  Don't forget to put your sangria in a pitcher and encourage your guests to help themselves!  The last thing you need to worry about is mixing, shaking, pouring and chasing after empty glasses.

In the next week I'm excited to share more about our plant-based Thanksgiving main event, dessert, and even how I get the guests (and kids) involved setting the table.

And churros, the sunshine, the 3€ glasses of wine, the markets, the tapas, the list is endless. So, in the spirit of being thankful this month, this recipe is my love letter to sangria (and all things good about my seven years in Spain!) There's nothing classic - nor Spanish - about this recipe, the only reason I dare call it Sangria is because I dunked some fruit into my wine glass.  But if you're looking for a delicious autumnal drink, a perfect Thanksgiving cocktail, look no farther.  Swipe for Recipe.

Note:  In the recipe, you'll notice you have options for how you want to top off your glass before serving.  I've tested it in every way but I prefer topping mine with a Spanish sparkling wine,  because, well, I miss Cava too.

This is a very happy me as I've just put the finishing touches my FIRST plant-based Thanksgiving menu.  I'm actually a little giddy.

For me, the key to stress-free entertaining of any kind is to do some planning in advance so I can enjoy not just the actual day but also the days leading up to it without overall dread.  So, let's get this party started.  Today, I'll share what I'm serving for appetizers & cocktails.

Cocktail:  Harvest Sangria (A mix of dry white wine, apple cider, some of my apple butter, cognac and top with ginger beer). Will be taste testing tonight so check out my stories later to see how it goes.  If it works, I'll share the recipe next week.  If it's a flop, I'll revert to the Apple Butter Smash I shared yesterday!  Always have a Plan B

Appetizers:  I like to keep it light here.  I can't tell you how many times I've overindulged in the appetizers just to be so full I can't imagine eating the actual meal.  So we'll start with my Pumpkin Hummus (recipe in previous post) with crudités, crackers and crunchy bread.  Additionally, I'll make a batch of Spicy Mixed Nuts & Pretzels (recipe coming soon). And that's it!  All of these recipes are super easy, can be made in advance and are ....yep, 100% plant-based.

  • In our house, today marks the two week-long process of gearing up for Thanksgiving.  While we haven't lived in the US for ten years, this is BY FAR my favorite holiday.  Beside the focus on food, it also gives us cause to stop, reflect, and be grateful for what we have. 
This year I'll be hosting my very first plant-based Thanksgiving and I’m nervously excited.  In the coming two weeks I'll be testing and tasting recipes to share with you and I can't wait!  But for now, this is the cocktail that I served last year which features that apple butter recipe from my last post.  Around here, we call it the Apple Butter Smash, I'll let you decide why... If you're wondering what to serve for your Thanksgiving cocktail - or just in need of a delicious indulgence this weekend - try it out! Simply combine a handful of ice, 2 tbsp apple butter, 2 shots bourbon, 1 shot Cointreau and juice of 1/2 orange to a cocktail shaker and shake until your arm gets tired. 💪🏻 Strain, pour over ice and top with a splash of your favorite dry sparkling wine (in my case, Cava to remind me of Thanksgivings past in 🇪🇸Spain.) This makes enough for two drinks but the recipe can be doubled - or tripled - if you're thirsty.

  • Don't be fooled, there's no butter in my Maple Apple Butter at all! It's just a thicker, more flavorful version of apple sauce that's deeply caramelized and packed with the best flavors autumn has to offer. While I have been known to eat it straight from the jar, I also love to slather it on toast, or put it on top of my oatmeal in the morning.  For my friends who celebrate Thanksgiving, this is a perfect condiment to add to your table for something a little different, yet so very delicious.

I use my slow cooker for this super easy recipe. But if you don't have a slow cooker, no problem! You can use a large saucepan on your stove top.  My best advice would be to make it on a day when you can be home for a few hours because while it requires minimal effort ... it does take time.  But I promise, it's well worth it.

In the slow cooker or saucepan, combine the following: 1.5 kg (a little over 3 lbs) of your favorite apples, cored and roughly chopped 🍎 500 ml (approx 2 cups) apple cider 🍎 125 ml (approx 1/2 cup) maple syrup 🍎1 tsp vanilla extract 🍎 2 tsp ground cinnamon 🍎 1/2 tsp fresh ground nutmeg 🍎 1/2 tsp ground ginger 🍎 1/4 tsp ground cloves and a pinch of salt. Cover and set slow cooker to high setting for 4 hours, stirring several times throughout cooking. (If on stove top, set to medium heat for same amount of time). After the 4 hours are complete, transfer the apples to a blender (or use immersion blender) and puree until you have a very smooth texture. Return the apple butter to your slow cooker (still on high setting) and cook, uncovered 1 more hour (same process for stove top). After this time, it should be very thick!     Don't be fooled, there's no butter in my Maple Apple Butter at all! It's just a thicker, more flavorful version of apple sauce that's deeply caramelized and packed with the best flavors autumn has to offer. While I have been known to eat it straight from the jar, I also love to slather it on toast, or put it on top of my oatmeal in the morning. For my friends who celebrate Thanksgiving, this is a perfect condiment to add to your table for something a little different, yet so very delicious. I use my slow cooker for this super easy recipe. But if you don't have a slow cooker, no problem! You can use a large saucepan on your stove top. My best advice would be to make it on a day when you can be home for a few hours because while it requires minimal effort ... it does take time. But I promise, it's well worth it. In the slow cooker or saucepan, combine the following: 1.5 kg (a little over 3 lbs) of your favorite apples, cored and roughly chopped 🍎 500 ml (approx 2 cups) apple cider 🍎 125 ml (approx 1/2 cup) maple syrup 🍎1 tsp vanilla extract 🍎 2 tsp ground cinnamon 🍎 1/2 tsp fresh ground nutmeg 🍎 1/2 tsp ground ginger 🍎 1/4 tsp ground cloves and a pinch of salt. Cover and set slow cooker to high setting for 4 hours, stirring several times throughout cooking. (If on stove top, set to medium heat for same amount of time). After the 4 hours are complete, transfer the apples to a blender (or use immersion blender) and puree until you have a very smooth texture. Return the apple butter to your slow cooker (still on high setting) and cook, uncovered 1 more hour (same process for stove top). After this time, it should be very thick!   • Morning everyone and Happy Sunday!  We all woke up craving waffles this morning and lucky for me our family favorite recipe is SO easy to make.  You basically turn on your waffle iron, put all of the ingredients in the blender and before you know it you're indulging in Sunday morning waffles that are delicious and good for you too!  Swipe for the full recipe. 💚

While I haven't tried it yet, I think a wonderful seasonal variation would be to add in some pumpkin puree and pumpkin pie spice.  You can easily freeze these waffles for later in the week but sadly in our house there never seem to be any leftovers.  Hope you enjoy!

  • Correct me if I'm wrong but I think there is a common stereotype that vegans love to tell you they're vegan, then judge you for not doing things their way.  I'm here to tell you that for me, that was absolutely not the case.  I was so nervous yesterday before opening up about my story, which is why I avoided it like the plague for the last year and a half!  But the overwhelming words of encouragement and support from those who posted here or reached out to me personally sharing your own experiences and stories, for those who approached me with opportunities, collaborations and community building has been amazing.  I am incredibly grateful and my heart is so full. 💚

Here's the thing.  I believe our relationships with food should be about what's practical and possible for each of us.  Nothing in life is perfect - nor does it have to be.  I think one of the most overwhelming aspects of an exploration with plant based foods is just not knowing where - or how - to start.  And that's how I'd love to connect.  I'm not here to convert anyone to my exact way of eating.  I'm just happy to share what has worked for me and my family.  And maybe give you a few extra options for whenever you want to add a little more plant love in your life :) 💚

So next week I want to start a weekly post about how to give your favorite meals a plant-based makeover without compromising deliciousness.  Shall we give it a try?   • Hi Friends, I've put off writing this post for so long. I just wasn't ready, couldn't find the words. I make a lot of mistakes. 
In 2018 I launched my business, Knead Good Food. My objective was to share with local clients how to prepare simple, healthy food through workshops and consultations; to use social media to reach those outside of Switzerland. The food I taught others how to prepare was healthy, simple, delicious. No restrictions. 
Several months later, something happened. I started feeling horrible. I had put on excess weight, had difficulty sleeping, felt sore all of the time, and was forever exhausted. Naturally, the physical symptoms impacted my mental health and it wasn't good. I had no motivation to cook for my OWN family - never mind my clients, even less so my social media followers. I'm not sure why I didn't share all of this then. I think I was afraid my business would fail. I would fail. All the energy I put into my dream job would be for naught. So something had to change. 
I tried everything in search of a way to feel better, and finally decided to experiment with plant-based eating. I'd never considered a plant-based diet before because there are two things I hate most when it comes to my kitchen: 1) Rules and 2) Labels. And in my mind, plant-based eating seemed to be laden with SO many rules and labeling that I rejected it like my kids reject mushrooms.  Which is to say I REALLY rejected it - but I would try anything to feel better.

At first, I felt I needed to hide my new way of living. I thought no one would ever come to a plant-based workshop, buy a plant-based cookbook - let's be honest - none of my friends would even want to invite me over for dinner! If I could hide it, everything could go on as 'normal.' Spoiler alert:  it did not! 
All to say, for the first time in 1.5 years, I'm excited to open up about the journey - the good AND the bad. Maybe you’re interested, or maybe you just want to scroll on by. That I respect. I am completely open to your input. 💚

  • I once read that sunflower seeds are the world's healthiest food.  Hmmm, while I will not officially support or deny that claim 😉, I CAN tell you we love them at our house!  We put them on salads and soups, in cookies, granolas, and energy bars.  Recently, I even used them as the base for a tasty spinach pesto.  But for today at least, I'm happy to put the recipes aside and watch as my daughter uses the last beautiful sunflowers of the season as the canvas for her happy expressions.
