What could be more cozy than some creamy tomato soup for fall? My Roasted Tomato Chickpea soup is both tasty AND healthy. It's hearty too which means throw a little side salad with it and you'll have a satisfying meal. I seriously love this soup so much I make it at least once a month. 🍅⠀ Nutrition-wise, tomatoes contain lycopene, a antioxidant in the carotenoid family. Antioxidants protect our bodies from damage caused by compounds known as free radicals. When free radical levels outnumber antioxidant levels, oxidative stress can be created. 🍅⠀⠀⠀⠀ ⠀⠀⠀ Research shows that lycopene’s antioxidant properties can help balance our keep free radical levels. How often do you remember to take a deep breath? I know I don't do it enough. ▫⠀⠀⠀⠀⠀⠀⠀⠀⠀ We have so much going on today: busy schedules, kids' busy schedules, cooking, cleaning, work... it can all feel like too much at times. ▫⠀⠀⠀⠀⠀⠀⠀⠀⠀ That's when I take a minute to stop and breathe. It doesn't sound like much, but it really helps to release tention and relax the body. ▫⠀⠀⠀⠀⠀⠀⠀⠀ So take in that big breath. Repeat a few times. Enjoy it. Then you can get back into what you're doing. This was me in August, looking I had no worries in the world... but pictures on social media don't always show the full picture. Sometimes I really need a big ol' bowl of comfort food. It's been a stressful week with finding out my Sophie has kidney disease as well as having to have her go in for some dental surgery. I had a procedure done today and I'm also trying to fit in getting the finishing touches of my detox which is starting Sept 30th. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ To satisfy that need for comfort, I made one of my favorite soups yesterday: my delicious vegan Creamy Vegetable Soup.
