My project is small, intimate, and personal; because this last adjective, it's a blow to feel a lack of reception, but then there are the first two words to set the scene. A week with a few less diners at a restaurant won't be felt, depending on how many a few exactly is. When you're organizing and serving 15 people a week, every fluctuation is felt. I love pie and pies that dance between sweet and savory make great partners. This is one of the few flavour pairings explored during quarantine and brought back during Cenaforum last week as a flavour pop before the more mellow and savory duck chawanmushi.

Besides the ghee in the pastry, it's almost vegan! That fat could easily and flavorfully be replaced with olive oil, which would take it to a different but equally lovely space as the nuttier ghee.

I can't express to you my continued suprise at the relentless adherence to tradition that many nontraditional people follow when it comes to food. They can be anarchists, monarchists, artists, or businessmen, it doesn't matter; food customs somehow filter through critical, modern sensitivities, and root themselves in memories of grandmas and old kitchens

This dish for example, is a pretty simple variation of the theme within valencia paella of a meat, jardin vegetables and a red colorant/flavor. However, there's no way any Valencian would accept it as a paella, is it because I'm puertorrican? Maybe, but I don't think so. Perhaps it has more to do with the blurry line between interpretation and imitation

When I look back on the various lives I've lived with my relatively short time on this earth, it often happens that this reflection turns swiftly into a spiral of self-punishment where memories become harsh justifications for the wrongs done to me and where the wrongs I've done to others transform into conclusions of my character

While I wish I could say that it's easy for me to discard these patterns of thought as unhealthy, reductionist, and generally pointless, learning that today is suicide prevention day and thinking of the friend I lost this year (and the loved ones people lose everyday) is a reminder that it's both important and ok to say publicly and personally that the toughest things shake off aren't gamba stains on pants

Questioning oneself can a good way to know oneself, asking oneself difficult questions about difficult times isn't easy, obviously, but taking the time do so without weaponizing the process, without letting one's mind become the shovel by which one hallows out one's own future can be for some, even more difficult. Here's to the friends, naps, and cheesecake that help me put down that shovel and invite me to play in the puddle.

Last night at like 9:30pm I randomly got the craving for a good ramen. While I'm still waiting for @ikigairamen to take me a Barcelona ramen adventure, I decided to make my own with whatever nighttime raval markets could offer. Luckily for me the offer was beautiful

From broth to bowl, including the noodle making, this bowl was conceived and executed in about two hours. The experience made me reflect on my first painful deep dives into ramen trying to reproduce in a day the bowls @davidchang and @ramenjunkie had spent years developing. Perhaps, in someways atleast, I have grown in these past years.

This growth can't be mentioned without also mentioning the people and community within which I've learned and shared this soupy world, a group that without which my quarantine would've been much more lonely.
