Chef Ume’s twist on an American Clam Chowder. Instead of butter, cream and potato we make a dairy-free version with miso, soy milk & dashi. A little sake splash doesn’t hurt either to wake up those clams. Part of Chef’s Omakase menu this summer.
Did you know - the Middle Eastern super-green, known as Jew's mallow or Egyptian spinach, has a high vitamin and mineral content. This “food of kings” dates back to the time of the pharaohs, when an Egyptian king drank it in soup to recover from an illness. We found some here in Southern California to make an Egyptian spinach soup with white asparagus & Caviar - a great start to a summer Omakase.
