  • Using nature as a teacher. The deep connection to the land that indigenous peoples have is something I’ve really been fascinated by. In New Zealand, the Māori use geothermal steam vents around Te Puia in Rotorua, to steam chicken, fish, corn, kumara (like a sweet potato that’s native to NZ) and even dumplings. This one was around 98 degrees and alkaline based (so no sulphur in the steam). Chicken would usually take 1 1/2hrs. Reflecting back to my 7.5 month travels in 2016, writing about how food connects us #newzealand

During a tour @westbankfn last year, I was introduced terroir through language, which sparked this.
