These might not be the prettiest muffins going around but today I was told, 'those muffins are elite', and 'where are mine?' when we ran out. The aroma wafting through the place had the players following their nose to the kitchen! The positive feedback is what I want to hear from the boys @hawthornfc when I bake! If you would like to make these beauties: . Recipe: 2 cups self raising flour (try half wholemeal) 1 tablespoon of chia seeds 80ml extra virgin olive oil 2 eggs 1/2 teaspoon vanilla bean extract 2 tablespoons natural yoghurt 1/2 cup milk 1/2 teaspoon cinnamon 2 teaspoons of honey 1/3rd cup sugar 3 mashed over ripe bananas . Mix the oil, sugar, eggs and vanilla bean together until fluffy. Add all other ingredients and mix. Place into muffin tins Bake at 180 degrees for 15 minutes and serve. . Great for after training, sweet snack before afternoon exercise. Moist and delicious! . What are your favourite muffins? Do you enjoy crisp, hot pastry? My home made winter pasties will give you this. I pack them with vegetables, lean mince and Worcestershire sauce for plenty of flavour. Would these be a winner in your household? RECIPE 1kg lean mince 700grams mixed frozen Aussie grown vegetables (carrot, corn, pea mix) 1 finely diced onion, sauteed 1 small chilli finely chopped 1 tablespoon tomato sauce (not essential but adds a little sweetness) 6-7 sheets puff pastry 2 tablespoons of Worcestershire sauce 1/2 cup beef stock Ground black pepper Fry the onion and lean beef until brown in some extra virgin olive oil. Add in the rest of the ingredients and simmer for 20minutes. Allow to cool. Defrost the pastry sheets slightly. Spoon in equal amounts of mixture into each pastry sheet and wrap into individual parcels. Brush the top with a little water and sprinkle with sesame seeds if desired. Place in a hot oven 220 degrees until pastry puffs and is golden. It takes around 20minutes. Serve with steamed greens or a green salad.

With this lot today I spent the afternoon cooking: 🔸️Home made pasties with fresh lean beef mince and actually some mixed frozen veg I picked up from the supermarket! 🔹️Sweet potato and pumpkin soup 🔸️Asian soup with a little lean beef, bok choy, broccoli and cauliflower 🔹️Flat head fillets with mashed potato and steamed bok choy, broccoli and red capsicum in soy that we had for dinner tonight. . What would you make with this lovely lot? There is some pork mince in there too for another day, maybe dumplings with that? . . How delicious is this! Today my 19 year old son cooked me lunch! A scumptious omlette with capsicum, bacon, chives and cheese. My contribution was the mixed lettuce with extra virgin olive oil and sticky balsamic vinegar! 😂 . It makes me thankful that I had him helping in the kitchen from the age of about 3, chopping mushrooms, bananas, stiring batter for cakes, cutting out biscuits and rolling meatballs. Cooking is all about confidence and when I came home from clinic this afternoon starving he whipped this up for both of us in no time. It tasted heaps better than omlettes I make that always turn into scrambled eggs! He can whip up dishes in no time, so takeaway is rarely in his diet. . Today @swisseau we had an awesome panel of speakers, Luke Darcy, @paulroos1 and @maverickweller facilitated by @stephen_gilham , share their thoughts around Men's health. They all look at the 3 pillars of health: Mind, movement and nutrition and incorporate activities during their day involving these. 🔹️meditation was a priority for all 🔸️movement, from walking the dog, a short run and stilling play AFL for Mav helped with physical and mental health 🔹️making nutritious food choices and keeping alcohol in check made them feel well and they could tell when they had made poor choices 🔸️sleeping, regular sleep hours and routines were different between them but they all had routines to suit their lifestyle. . They by no means felt they were perfect, but they all do make life choices to prioritise their health and we can too. There is plenty of help around. Just ask. .. . Great to see Luke again today. Looking for a dish that can be a few meals in one? This is one of my favourite go to dishes. I start with mince, either kangaroo, beef or pork and then pile in heaps of vegetables and some legumes too. There is a recipe on my website. 🔸️onion 🔹️garlic (can use ingused oils if you prefer, especially if a FODMAP issue) 🔸️grated carrot 🔹️mushrooms 🔸️fresh or frozen spinach or silverbeet 🔹️canned tomatoes 🔸️brown lentils or cannes kidney beans 🔹️sometimes celery 🔸️sometimes grated zucchini I add some stock then let it simmer. If I want it as a pasta sauce I use it as is. If I would like chilli con carne I add chilli, smoked paprika, cumin, sweet corn and kidney beans. . It is a great one to freeze and you can add a wholegrain of your choice e.g. wholegrain pasta, freekah, brown rice or quinoa.
