🍶 The great advantage of importing sake is that you can always find something nice when you are in a drinking mood. Fancied a small bottle of #dassai39, which was perhaps not a sommelier’s wet dream when it comes to this particular food pairing, but which was still empty when we finished our homemade gravad lax 😅.

🍶 Asparagus! Again! As they are only available three months a year, you have to make it count 😉. Served with guinea fowl and tarragon, paired with @shichiken_sake ‘s Velvet, a lovely Junmai ginjo that has a herbiness to it that really complements the asparagus, while still not too obstructive against the poultry, a lovely spring time dinner!

🍶 The first time I attended the salon du sake a couple of years ago, @xavierthuizat, the current president of the @kura_master competiton mentioned soup and sake as a surprising but delicious combination, so time to put it to the test with an asapargus - smoked eel vichyssoise! @dewazakura_sake has been hugely important for the sake industry in Yamagata prefecture, as evidenced by its support of the dewa33 geographical indication, one of the first in Japan. Crisp and lean but with a ginjo softness that makes it a great match against the fattiness of the wel, while contrasting with the distinct taste of asparagus. Looking forward to more soup-sake combos!
