Let’s talk pantry organization. I get asked often about the jars in our pantry when they make an appearance in my stories. You can click the link in my profile and then click on “Shop My Favorite Things” to see the jars and lids we use. No need to pay for an expensive organizer to come professionally clean out your pantry. Just get some jars and lids and do it yourself. Not only is this set-up visually pleasing, but it helps us cut down on single use plastic. Instead of buying packaged products, we shop in the bulk section whenever possible and bring our own reusable bags. From there, we just transfer everything to glass jars. We do the same with the things we aren’t able to buy in bulk because having it in a sturdy glass jar instead of a plastic bag reduces spilling and waste. We can see at a glance what we have and that prevents us from buying the same things over and over due to not knowing what’s in the pantry. You don’t have to have a large pantry to use this storage and organization method. You can even do it right in your kitchen cupboards. I know the question on the tip of your tongue is “How do you know what everything is?” Well, I know what they are because I put them there, but I also noted what is in each jar on the bottom with a sharpie. It washes off in the dishwasher, and you can use the jars for something different the next time.
It’s 2pm and this is my first meal of the day. A big fat salad. I typically eat a big salad every single day. In fact, for the last few years I’ve even run a “Salad a Day May” challenge through the month of May. Some days it is my only meal and other days it is one of 2 or 3 meals. Sometimes they are monster sized and sometimes they are average. I eat according to my body. I eat when I’m hungry. I eat based on activity level. I eat intuitively. I eat what I want to eat and you should too. There is no one-sized fits all approach to keto. This picture popped up in my FB memories today and it’s got me a little sentimental. 6 years ago today, 3000 copies of my first cookbook arrived at my house. The boxes completely filled our garage. It was a self-published endeavor and this was the amount of pre-orders I had to fulfill. We cracked some champs, recruited friends and packaged and shipped them all on our own. It was amazing and I cried more than once. But they were happy tears. At the time, I never even thought of approaching a publisher. I just knew that I wanted to put a book out into the world and I was going to put my head down and get it done. Here I am 6 years later about to put my 6th (5th professionally published) book out into the world. Make no mistake, it has been A TON of hard work and dedication. But I’ve always been a really motivated and driven person, so the “work” has also been a lot of fun and a source of joy. Today I am reflecting on what a wild, crazy beautiful 6 years it has been since this photo was taken. It’s never too late to make your dreams come true as long as you are willing to put in the work and see them through.
