#AD Okay, how delicious do these keto chocolate nut clusters look? I’ve partnered with @lilys_sweets_chocolate again in support of their 21-day no sugar added challenge. This was an easy choice because I’ve already been buying and using their products for years. Check out my stories for more details on the challenge. These nut clusters are so simple to make. You simply set up a double boiler and melt down a bag of Lily’s Dark Chocolate Baking Chips with 1/4 cup of coconut oil and mix in any combination of lower carb nuts that you prefer. Then you drop it in mounts onto parchment paper and put it in the fridge to chill. That’s it! Super simple. They are also really delicious with some Maldon sea salt flakes on top. Yum!
Warm Taco Slaw. This recipe is from my book @craveableketo and I just posted it on my site so that everyone can enjoy it. Think egg roll in a bowl meets Taco Tuesday!! As always, you can find the link to this recipe in my profile. Not only is it low carb, paleo, and even whole30 compliant, but it only dirties in pan and is ready in under 30 minutes. It’s also great for meal prep because it reheats really well. You really can’t beat that!
PART 2 : Random Facts 1️⃣ I am true crime obsessed. I have been since I was a kid. Other than being a writer, the only ever thing I ever wanted to be was a forensic psychologist. Long before I ever started blogging or writing cookbooks I wanted to write a novel. Somewhere buried in a box of things from my childhood is the start of a novel I was writing about a serial killer. 2️⃣ I have a very irrational fear of house fires. I worry about it all the time. It makes me feel crazy, but I also want to know where it comes from. 3️⃣ I can eat the same foods over and over and never get tired of them. I’ve literally made more than 1500 recipes in the time that I have been blogging, but I keep the same 5 or 10 in constant rotation. 4️⃣ I am deeply passionate about animal rescue and would honestly take in every stray dog I could. That is how we ended up with 5 dogs (sadly now 3 - RIP Sweet Jack and Bella) When I am not thinking about food, I am thinking about ways to save more dogs. In fact, for the last 3 tax years or so, 100% of my charitable donations were animal related. 5️⃣ I always wish on 11:11. It feels magical to me. It’s also shocking to me how many times a week I look at the clock at exactly that time. 6️⃣ I have a pretty impressive collection of Converse. I’ve worn them for more than 30 years and I’ll still wear them for the next 30 years 7️⃣ I love the rain even though I complain about it constantly. My perfect place would be a blend of Maui and Seattle 8️⃣ I did Crossfit for years and even got my CF-L1 coaching certificate. But I never coached and I don’t pick up a barbell nearly as much as I’d like to these days. 9️⃣ Travel is what fills my cup up. The world is too big to stay in one place. 🔟 I lost count of how many tattoos I have. Some days I wish I never started and other days I can’t stop planning new ones. 1️⃣1️⃣ Even though I am holding brussels sprouts in this photo, I really do not like them. They were my childhood torture food. I still make recipes with them because other people love them.
PART 1: Hey friends! I realized today that as this page continues to grow, there are many people who don’t actually know anything about me and likely only found their way here because of the words “low carb” and “keto”. So, I thought I would introduce myself again and share some random facts about myself. My name is Kyndra. I am a professional food blogger and cookbook author. I am a wife, an obsessed dog mom, and a step-mom to two awesome human kids. You won’t really ever see them here. But it’s not because I don’t love and value them. It’s quite the opposite. I love them enough to respect their privacy and to give them a childhood free of social media. I chose this business, they did not. In the rare glimpses you may catch of them in my stories, you can bet that I asked their permission first. The dogs on the other hand, they have no choice. I photograph them and take video of them ALL day long. 🙂 I am an imperfect person who strives to do my best and be my best on a daily basis. I am also a person that has struggled with their weight most of their life. I know what it feels like to feel less that, to want to hide, or to live behind the masks of shame and unworthiness. I am not a highlight reel type of person and will always show the good, the bad, the hard, and the sad. I pride myself on honesty, integrity, kindness, and compassion. I come across as having a rough exterior and have been told this my entire life. But the truth is that I wear my heart on my sleeve and feel things very deeply. In relationships I mate for life. If I love you, I will love you forever. Conversely I can hold a serious grudge. It’s one of the many things I am working on. You should also know that I love words. As an author, I think that is probably obviously. But beyond that, I believe in their ability to build people up or to tear them down. We rise by lifting others and although they say actions speak louder than words, words have become pretty LOUD in this digital social media fueled age we live in. So I choose kindness.
