  • It’s @cleanupaustralia  day, so we’ve decided to share a few handy tips on how you can reduce your waste whilst going out and about for food and groceries!

#1: Whenever you’re grabbing takeaway to eat at home, just let the staff know you don’t need the single-use cutlery that usually come with it. It’s a small change but it helps to make businesses to be more receptive to these requests. Sometimes, it could even lead to a meaningful conversation with the manager about reducing waste in store!

#2: It’s easy peasy to bring along a small container and tote bag for whenever you’re eating out or going out. Leftovers and impromptu purchases happen, just be ready for them!

#3: All of us have made impulse purchases or fallen for deals at the shops. And most of the time, the additional items you’re popping into your basket are things you don’t need. Making a shopping list (and sticking to it) can help with preventing that and reducing wastage.

#4: If you’re headed to the meat, seafood and deli section at your local shops, ask the staff kindly if they allow you to use your own containers! You’ll be avoiding a lot of unnecessary plastic and paper waste in the process.

  • Had some roast chicken recently? WAIT! Don’t chuck out the leftovers! They’re invaluable for making your own gourmet homemade chicken stock. 🐔

All you need are your leftover chicken bones, some additional vegetables for flavour, water and a little patience. As the bones have already been roasted, they have already undergone the Maillard reaction: a reaction between amino acids and sugars as meats are heated and browned that enhances and concentrates flavours. To put simply, it means you can save a little time from having to bake the bones!

To make the stock, simply throw together the above ingredients in a crock pot and add water till everything’s covered. Cook for 1-2 hours and scoop out the lumpy veggies and bones. You can cook the remaining liquid for longer to make the stock even more concentrated to freeze in an ice tray! They make for conveniently sized cubes of chicken stock. As for the leftover veggies, blend them in a food processor and add a little cream to make a simple bisque.

See? Reducing waste doesn’t take a lot of effort… and it’s so delicious too! There’s heaps of goodness in every part of the chicken, even the “leftovers”!

Considering the environmental and social costs of food waste, it’s something we need to tackle with urgency. We can all contribute by making better choices in our weekly shops and even when we eat out or get takeaway. A simple rule of thumb is to buy only what you’ll eat.
