Are you a cheddar cheese on your burger ketonian? Or some other delicious slice of formage? What is your fave? I have to admit I like a nice big thick slice of real sharp cheddar cheese. All wrapped in lettuce of course. Oh, and also a nice big thick slice of mild white onion. I love making burgers at home. It’s the Summer of Sides around here. It’s all getting grilled. The steak and the veggies together. What is your favorite veggie to grill? For this Italian squash all I did was cut the ends off and then cut lengthwise. Brush with olive oil, season well with @avogel_usa Herbed sea salt, and then grill. As soon as it comes off the grill I sprinkled on some shredded asiago cheese then red pepper flakes. That’s it. Grilling all the foods tonight for dinner.👍🏻 Have you ever grilled Romaine lettuce before? This is one of my favorite foods to grill during the summer. All I did was cut the Romaine in half lengthwise. Make sure that you leave the core intact because you’ll need all the leaves to stay together while grilling. If you cut the core out you’ll just have a big mess. I then lightly brush the lettuce with olive oil and then seasoned with @avogel_usa herbed seasoning salt. Just place the lettuce flat side down in the grill and cook for about 5 minutes. Once done I just placed it on a platter and I topped it with mini pepperoni, red onions, feta cheese, and marinated sun-dried tomatoes. And then I drizzled @primalkitchenfoods Avocado oil and Vinegar dressing over the top. Love love love this dressing.💗 For the grilled chicken I just grilled it spatchcock style. Which means I just cut out the back bone and then opened the chicken up to lay flat (breast side up) and then press down on the breast bone until it cracks. That will make it lay very flat. I then marinated it in a lemon herb marinade by @ghughessugarfree And I also grilled the lemons cut side down. I grilled them really well and then I squeezed the hot lemon juice all over the chicken whenever the chicken was finished cooking. Working from home means that every once in a while I get to have a little midday snack just like the one that I had today. Using my immersion blender (aka stick blender) I started off with a little bit of half-and-half and some  low carb Cookies and Cream ice cream from @rebelcreamery creamery and blended until thick and creamy.  I poured the milkshake into a @ballcanning glass jar and then topped with a low carb cookie. The recipe is from @gnomgnom.yum The chocolate chip cookie was great for dunking and dipping. The chocolate syrup drizzled around the rim of the glass is from @choczero You can get a discount for the chocolate syrup and chocolate chips from Choczero using my code LOWCARBERISTA And if you drizzle a bit of extra chocolate syrup into the milkshake it falls to the bottom, gets really cold and tastes like hot fudge sundae. Hello everyone! I had a delicious dinner tonight and I wanted to share it with you. It was so easy because I had a bunch of riced cauliflower left over from yesterday‘s dinner and I gave it a bit of a makeover. While my sausages were cooking in my Johnsonville Sizzling Sausage Grill (love that grill!) I sautéed a bit of onion and green peppers. Once the green peppers and onions were done I just added the leftover cauliflower cooked everything up and seasoned it really well. By the time that the cauliflower was all done so are the brauts. I just serve the brauts on top of the sautéed cauliflower, onions and green peppers and put a little bit of hot sauce on top. My husband likes his with a little bit of yellow mustard. Have you ever made a Corned Beef Brisket in an Instant Pot? It’s probably our favorite way to cook one. We make it low carb by subbing the potatoes for rutabaga. We also like to have plenty of leftovers (To make Keto Rueben Casserole) so we buy a 3.5 lb prepackaged brisket (the kind that includes the seasoning packet) and cook in an 8 quart IP. We start by putting the wire rack in the bottom of the IP and then add the brisket and just enough water to cover the meat. Add the seasoning packet, 2 dried Bay Leaves, a large sliced onion, 5 ribs of chopped celery, 1/3 cup of freshly chopped parsley and a few carrots if you have some carbivores ina your life. We let it cook on high pressure for 90 minutes. Then manually (quick) release immediately.  Carefully remove the lid and then add a quartered head of green cabbage and a sliced rutabaga. And then twist the lid back on, seal the vent, and set the pressure for 3 to 5 more minutes.  Then do another manual (quick)release.  Then serve. I’ll post a pic of everything when it’s finished. And just as a sidenote, when you are quartering your cabbage make sure that you completely cut the solid hard core out. That thing takes forever to cook in the instant pot. Much longer than 3 to 5 minutes. We serve this with creamy horseradish sauce and grainy mustard. My husband especially likes it with the new low carb beer from Corona called Premium Corona. #cornedbeefbrisket #instantpotbrisket #lowcarberista

Tonight for dinner I made a #megameatball stuffed with mozzarella cheese in my @instantpotofficial for dinner. Hmmm, it might have almost been as big as my head. If you go to my highlights you’ll find one named, “Instant Pot”. Just go to the pic of the mega meatball and click on it. That will take you to the recipe. I did do something a bit simpler for the sauce. I just used one jar of @raoshomemade plus 1 cup of chicken stock and stirred in 1 TBL of dried Italian seasoning.
