Packed with Vitamin C, antioxidants, and antiviral properties. . 💜 Joan’s Elderberry Syrup Recipe This is a great cold and flu preventative. Elderberries are antiviral, high in antioxidants, Vitamin C and A. As soon as you start feeling like you might be getting sick, tired, achy, scratchy throat, start taking elderberry syrup. It’s great for children too. I do 1/4 teaspoon to 1 teaspoon for children and 1 tablespoon for adults several times a day. The sweetener helps to preserve this syrup. You need 2 cups of sweetener, try date nectar, brown rice syrup, coconut nectar or agave. If you don’t want to use this much sweetener, you can make a small batch and add a small amount of sweetener and use it within a few days. Store the elderberry syrup in the refrigerator. Use the syrup within 8 weeks. Makes 4 cups 1 cup (heaping) dried elderberries (4 oz/114 grams) 3 cups water 2 teaspoons grated fresh ginger 2 cinnamon sticks 2 cloves 1 cup date nectar (syrup) 1 cup brown rice syrup Directions 1. Add elderberries, water, fresh ginger, cinnamon sticks and cloves into saucepan. 2. Bring to a slight boil, stir, reduce heat to a simmer and cover. Simmer covered for 25 minutes. 3. Using a fine mesh strainer, strain elderberries out of liquid. Strain again through cheesecloth or nut milk bag and squeeze additional liquid out. This should give you 2 cups. 4. Add 2 cups sweetener (date nectar , brown rice syrup or agave) to liquid. Stir well. Bottle, label and date it. 5. Store in the refrigerator. It should last for up to 8 weeks tightly sealed and stored in the refrigerator. Option: Add 2 tablespoons dried elderflowers with the elderberries in Step 1 and continue with Steps 2-5.
