All you need is 3 lemons, halved with the pith & rind removed. 4 Feather & PECK eggs 1/4 cup local honey (maple syrup works too) 1/4 teaspoon salt 90 g butter Blitz the Lemon in a high speed blender to form a purée. In a small saucepan, Whisk together the eggs, honey, citrus purée and sea salt. Add the butter and place the saucepan over low heat. Cook, whisking constantly until the curd thickens about 10 minutes. Strain the curd through a sieve into a small jar.
