Het waren kazen waarvan zij persoonlijk de receptuur hadden uitgezocht. In deze serie staan deze kazen centraal. We beginnen, natuurlijk, bij de keuze van Riet Willig, Henri’s vrouw. De door Riet gekozen kaas is ongeveer 10 maanden oud en weegt dus 8 kg. Zijn naam: ‘Pure Perfection’. En dat is-ie, pure perfectie! Riet vindt geluk in het bij elkaar hebben van de familie, rondom de keukentafel, om dan samen te genieten van onze heerlijke kazen. Kaas is tenslotte iets om samen van te genieten. They were cheeses of which they themselves had chosen the recipe. In this series we shine a light on these special cheeses. And of course, we start with the cheese chosen by Riet Willig, Henri’s wife. Riet’s choice matured for about 10 months and weighs 8kg. Its name: ‘Pure Perfection’. And that’s exactly what it is, pure perfection! Riet is happiest when all her family sits around the kitchen table, enjoying the goodness of the Henri Willig cheeses. Because our cheeses are for sharing and to be enjoyed together. ‘Pure Perfection’ is Riet’s favourite because of the rich flavour, and the delicious crispy crystals in this cheese. Daring Pairing: Cheese & Black Tea It isn’t necessary to always drink alcohol in combination with cheese. The diversitiy in flavour profiles of loose leave teas makes tea a great beverage to go with our premium Gouda cheeses. For those starting to combine the two, a golden rule applies: match the flavours. Let’s talk about black teas. If you have an earthy, hearty tea, like a black Assam tea, you could go for a Truffle cheese, to match that earthiness, or the Cumin. Or go with a Mature cheese to match the stronger flavours of your Assam. A fruitier Ceylan tea balances well with a young or mature Goat’s cheese from Henri Willig’s range, especially the Honey & Thyme. Old, older, best The earliest direct evidence of cheese making are clay sieves with traces of cheese found in Poland and Croatia. They date back more than 7,000 years ago! Henri Willig Extra Old Cheese is quite old too, though not 7,000+ years. After our premium Gouda cheese is produced, it is matured to perfection on our cheese farm. The Extra Old Cheese is about 14-16 months old. We produce extra old cheese made out of milk of cows, sheep and goats. We don’t use animal rennet anymore, but use microbial rennet.
