How easy is an Apple Pie to make? If you haven’t made one in a while, with this amazing Autumn rolling in, there couldn’t be a better time to refresh your memory of the childhood taste of #homemade pie #sogood and so comforting. Here is the quick #recipe #recipeshare INGREDIENTS Sweet Short Pastry 2 cups of flour 1 pinch of salt 125g butter 1/3 cup of sugar 2 eggs 1 tsp cinnamon (optional) A little cold water (1-2 Tbsp) FILLING Stewed apple 3 apples 50g softened butter 1 tsp maple syrup (or honey) 5 cloves Apples slices 3 apples 1/2 cup of brown sugar 2 Tbsp flour a. Heat oven to 180C 1. Make pastry by sifting flour and salt. 2. Rub in butter and sugar with your hands until is goes crumbly and resembles breadcrumbs. 3. Add egg yolks and mix through, slowly add chilled water until it resembles a dough. Roll into a ball, wrap in cling film or a honey bee wrap and refrigerate for at least 30 minutes. If you’re new to making pastry, I’ll be posting a quick #videorecipe in the next day or two. 4. Meanwhile stew apples by coring, dicing and boiling in 1-2 cups of water with cloves, until soft. Blend so you end up with a thick puree. Stir through butter, maple syrup. 5. Prepare sliced apples by coring and slicing, toss through flour and sugar. 6. When ready roll out 3/4 of the pastry and line a 20 cm greased pie dish. Blind bake at 180C for 10 minutes. Blind baking means baking at 180C with some removable weight on the pastry. An easy option is so place baking paper on the pastry, greasy side down, and a handful of rice on top of the baking paper. This way you'll bake a nice crusty firm pie base without it rising. 7. Remove pie base from the oven, add apple puree, then lay out sliced apples, and a pastry lattice on top. Brush pastry with egg white. 8. Bake for a further 25 minutes and you’re done when it’s golden brown. Serve with cream or vanilla ice cream. . #applepie and thanks @yummyfruitco_nz for the apples and tea towel!

#lestweforget here is an Anzac cookie recipe that uses in season feijoas if you have a laden tree in your garden, or failing that replace the feijoas with blended ripe pear from your Foodbox. We just thought it might be a nice way to commemorate in your bubble. FEIJOA ANZAC COOKIES These are a little like a flapjack but have feijoa and coconut, making them a true kiwi seasonal option. Anything crumbly and leftover makes a great granola. INGREDIENTS 1 1/2 cups of rolled oats 10 feijoa centres 1/2 cup of flour 1 cup of desiccated coconut 1 cup of brown or normal sugar 150g of melted butter 1 tsp of baking soda METHOD 1. Add wet ingredients together 2. Mix in dry ingredients 3. Press into a baking tray 4. Bake for 40 minutes until set. 5. Cool, cut and eat. Two perfect Friday dinner night options in the Foodboxes this week. Or is it Saturday night, or Thursday night, who knows? We have Indian inspired curry wraps using the curry sauce delivered last week, here is the quick #recipe if you have sauce and green beans left! Add the sauce packet to a fry pan and reduce down. Add diced green beans and 2-3 diced mushrooms (optional if they came in your Foodbox). Fry for 2-5 minutes until you end up with a thick delightful vegetarian curry. Serve in a wrap with spinach leaves, avocado and fresh tomato. You could add cooked diced chicken to the curry if you like too. Or keep it #vegetarian . And of course there is always the family crowd pleaser of #bangersandmash that needs no explanation. How will you be cooking your Foodbox salmon this week? I love mine pan fried, here is how I do it: its quite easy but the timing is crucial, and you’ll see here it’s a little undercooked (oh well can’t be perfect all the time, it still tasted amazing!) PAN FRIED You want it just cooked through, and flakey and so the whole salmon is a light pink (but only just) Step 1: Season fillets with salt & pepper Step 2: Add oil or butter to a hot fry pan,when it starts bubbling add salmon fillets skin side down. Step 3: Fry for 3 minutes until crisp Step 4: lip, lower heat and cook the other side for 2 minutes, until done. Serve with broccolini, carrots and tomatoes, a buttery potato mash and creamy white sauce #sogood #yum #healthy #delish. Is the #Autumn lighting #beautiful ? Warm food is the best. This is a simple slow cooked Italian Spaghetti (or pasta) dish as one of the #recipes this week. Delightfully Italian, deliciously slow and delectably divine. If you haven’t tried cooking a #bolognese dish in a slow cooker it’s time you tried, it turns out rich and tasty and it’s a perfect at home all day recipe. #stayhome #staysafe here is the #recipeshare . SLOW COOKER SPAGHETTI BOLOGNESE I also forgot to say that it doesn't take longer to prep at all (its actually quicker) but you do need 4-6 hours to cook the amazing tomato mince mix. Ingredients 500g Beef mince 3 tsp of crushed garlic (or two cloves) 1 Tbsp olive oil 1 onion 2 cans of tinned tomatoes 1 Tbsp Worcestershire sauce 1 cup of rich red wine 3 tsp of dried oregano Salt to taste Method 1. Heat olive oil in a fry pan, add diced onion and fry until browned, then add mince, fry and brown off 2. Add mince to the slow cooker along with tinned tomatoes and remaining ingredients. 3. Slow cook on medium heat for 4-6 hours and let it develop its rich flavours and fill your house with the most beautiful aroma. 4. Serve with cooked pasta and tasty cheese on top. .
