I’ve been developing a #recipe today inspired by an old English chicken pie, but, as per usual there weren’t enough vegetables in the original recipe so I fixed that with a leek sauce and a potato top! So here is how it goes: 2 awesomely cheep free range chicken breasts ($15/kg) delivered this week, diced and fried in oil Fried bread balls Leek sauce Mashed potato top #yum! Prepare all elements and bake for 20 mins at 180C Start with boiling potatoes (and you know how to mash them with butter and salt!) For the balls: 3 stale bread slices 1 egg Pinch of nutmeg 50g melted butter 1 Tbsp of your favourite herb (from rosemary, thyme or parsley) Mix everything together in a bowl with your fingers and fry in 1cm of hot canola oil for 2-3 minutes until brown For the sauce: 1/2 leek 25g butter 1 cup of milk 1 tsp Dijon mustard 2 eggs Fry leek in fry pan with butter until soft (1 minute) Add milk and Dijon mustard and blend into a smooth sauce, whisk through eggs. #boom a bit of a backwards #recipeshare but let me know how you like it! #breakfast #lunch or #dinner? When do you have your asparagus? Here is my best #recipe for #asparagus!!!! #sogood . This is my perfectionist way to cook asparagus. Prep: 1. Prepare stalks by snapping off the hard white ends (approx. 1 inch) and pop prepared stalks to boiling salted water, leaving the tips out of the water. Boil for 30 seconds-1 minute until the asparagus turns bright green 2. Immediately dunk asparagus in an ice cold water bath, so it turns bright green 3. Drain and cook asparagus how you like, e.g. fry in oil for 2-5 minutes in a fry pan or on the BBQ until it is as tender as you like it. Creamy Hollandaise Sauce (enough for 1 bunch of asparagus) 1 cup of milk 1 cup of chicken stock 1 Tbsp cornflour ¼ tsp nutmeg 2 egg yolks 2 tsp of creamed horseradish Juice from 1 lemon 1. Add milk, chicken stock, cornflour to a pot and heat on med heat, stir continuously 2. Last nights #dinner thanks to Pete and the @neatmeatnz Italian diced beef! We loved it, not really a #recipe but this is how simple dinner was, and can be! 6 hrs in the slow cooker: 500g diced beef, 2 diced carrots 3 peeled and chopped potatoes with 2 cups of water. Boom! Just 30 minutes before serving stir through either mushroom or onion packet soup mix! Honestly it was #delish and so simple only 5 minutes to put on before we left for the day.
