• We got so much love on our last Reel about tempering, we thought we’d share a little more about the science behind the process! 🔬❤️

Tempering is a science and skill that everyone working with chocolate has to understand and master.
The bottom left and top right disks are tempered dark and milk chocolate. The bottom right and top left are dark and milk chocolate that have been left to harden without tempering. The white splotches are sometimes mistaken for mold, but it’s called bloom.
What is tempering you might ask? 🤔 
For a simple analogy, think of a conga line 💃🕺
Temperature and motion are the party organizers bringing all the individual dancers into the conga line. In chocolate, those “dancers” are individual crystals of fatty acids from the naturally occurring cocoa butter in the cocoa beans. When you melt chocolate, those fatty acid crystals separate. Tempering is the process that brings them back together into that conga line, a stable form. If your chocolate isn’t tempered properly, you can end up with bloom.
