If you were in my Light it Up course at Photoshop World---I talked a lot about shooting in challenging light, especially mid-day sun without any modifiers/fillers. One of my best tips is to find the light pockets. Dappled lighting can create magical effects. Don't be afraid to embrace it. Use a spotlight technique. Find the pocket of sunshine where the light is already being diffused by foliage/trees, and place subject within that patch.
