Shh! This is our hidden wild leek patch. Why so secret? Wild leeks are an amazing foraged ingredient, but can be easily over-harvested because they can take 7 years to grow from seed to plant. For sustainable foraging: harvest the leaves and leave the bulbs, and only pick about 25% of a patch.

As part of our forest-to-table food philosophy, during the spring season we tap maple and birch trees on the property which is turned into syrup served on our menus. Fun fact: maple has a 40:1 sap-to-syrup ratio and birch has a 100:1 ratio.
